Meet Chef Dylan McShan
Chef Dylan McShan brings experience from James Beard Award-winning and Michelin-starred restaurants, with a culinary background spanning Houston, New Orleans, and San Francisco. That foundation shapes a thoughtful, seasonal approach rooted in local ingredients, careful technique, live-fire cooking, and whole-animal techniques.
Now based in Marfa, Dylan brings his love of food and the outdoors to gatherings in Far West Texas. His cooking pairs inviting presentation with a strong sense of place, keeping the ingredients and the people around the table at the heart of the experience.
