Meet our Chef Dylan McShan

With a background ranging from kitchens in Houston, New Orleans, and San Francisco - McShan uses fresh and seasonal ingredients from a variety of diverse cuisines. Dylan began his culinary career in Houston, where he found his passion for local ingredients, unique plating, and live fire. He helmed 2 James Beard nominated and award winning kitchens, Pax Americana and Underbelly.

McShan’s quest for learning traditional techniques took him to New Orleans where he spent time in some of The Big Easy’s most prestigious kitchens, including John Besh' August.

In 2018 he returned to Houston to open Rosie Cannonball, a chic and innovative Southern European concept with a heavy focus on live-fire cooking.

In 2021 Dylan spent time at David Kinch's Manresa before moving to Marfa.

Dylans culinary journey now sees him in Far West Texas, where his love for the outdoors and cooking comes to life - Unique locations and local ingredients provide for a dining experience like no other.
